I am very excited about my first posting! Yay!!!
My very own "arroz con leche" recipe. I have tried making it different ways but always go back to the original fool proof recipe.
- I have made it with brown rice(kids did not care for it boo to them)
- I have made it with fat free milk(Never again! You gotta have the richness or it's not the same)
- I have sweetened it with piloncillo(Although the kids did not really care for the taste, I personally LOVED the brown color and flavor)
- I have added raisins but the kids don't really like cooked raisins.
Arroz con Leche
3 Cups of water
2 Cups of whole cows milk
1 Can of evaporated milk 1 Cup of rice
1/2 Cup of azucar morena, or half a can of Lechera you can do both too (I prefer it over the white refined sugar but if all you have is white it is fine too, eventually do stop buying refined please)
2 Cinnamon sticks (Four for Nancy two for the pot two to stick in your hair so your family can see you REALLY slaved making arroz con leche hehe) 1/2 Tablespoon of vanilla (You read right tablespoon not teaspoon I like to really taste the vanilla and TJ's has really inexpensive & real vanilla)
And last but not least ground cinnamon to sprinkle on top of your "Arroz con Leche"In a pot bring your water to a boil, add your rice, cinnamon sticks and vanilla, lower the flame, cover pot and let the rice absorb the water. Once it's been absorbed add your milks and sugar to taste, I used 1/2 cup of sugar but do add more if you want it sweeter keeping in mind the diabetes we have inherited along w/this recipe! Make sure your fire is really low and stir every three to five minutes(Yes your hand will get tired from stirring but your kids will love you) making sure you scrape the bottom of the pot as it will start to stick and burn on you if you don't scrape the bottom well. If you do pull up the spoon w/a paste like stuck to it remove with another spoon eat the paste and repeat! Once most of the milk is absorbed pull out the cinnamon sticks eat whatever yummy rice is stuck to them and discard. Serve your "Arroz con leche" in glass containers preferably, sprinkle with ground cinnamon and enjoy!
The total amount of time it took to cook was about 50 minutes. I have tried adding the sugar at the beginning w/the rice but I read somewhere that doing this will make cooking time longer. Do let me know if you have any questions. Oh and what you see in this picture is not all the arroz there is four more containers that did not fit in the pict. :)
